How to make Eclairs!

Ingredients:

Pastry- 1/2 cup water

1/4 cup unsalted butter

1/2 tsp granulated sugar

1/4 tsp salt

1/2 cup all purpose flour

2 eggs

Pastry cream- 2 cups milk

6 tbsp sugar

2 1/2 tbsp cornstarch/cornflour

1 tbsp vanilla

3 large egg yolks

1 large egg

3 tbsp unsalted butter softened

Optional-

Melted chocolate


Directions:

  1. To make the pastry, melt together the water, butter, and sugar on the stove. Add flour and mix. Then add the eggs one by one and mix well.

  2. Spoon dough into a piping bag and pipe it out into log shapes on a baking tray lined with parchment paper.

  3. Bake at 425 degrees F for 10 minutes, and then, without opening the oven door, preheat to 375 degrees F and bake for 15 to 20 minutes.

  4. For the pastry cream, Mix vanilla and milk in a pot over medium heat on the stove.

  5. In a separate bowl, mix sugar and eggs + egg yolks. Add cornstarch/cornflour.

  6. Add half of your hot mixture into the egg mix. Mix well.

  7. Add it all back into the pot and mix over heat until thick. When it starts boiling, turn off the heat and mix.

  8. Pour cream into a container and cover with plastic wrap. Chill for 1 hour.

  9. Pipe the cream into the baked eclairs.

  10. Drizzle melted chocolate over them.
