Oat Flour Banana Muffins!



Hey guys! Today I made Oat flour Banana Muffins. I wouldn't say these are healthy, but they definitely are better for you than other AP flour banana muffin recipes because they have less sugar and are made with oat flour. Also, if you don't have oat flour, it's really easy to make! Just add rolled oats to your blender and blend for about 30 seconds until it comes to a flour-y consistency! These muffins came out SO SO good! They weren't wayy too sweet, but they were so flavorful!!


This recipe makes 12 servings.


Ingredients:

1/2 cup (1 stick) unsalted butter, melted

3/4 cup of sugar

2 large eggs

1/2 cup milk

3 very ripe bananas

1 & 3/4 cups oat flour

1 teaspoon baking soda

1 teaspoon baking powder

1/8 teaspoon salt

1 and 1/2 tsp cinnamon


  1. Combine butter, sugar, and eggs in a bowl

  2. In a separate bowl mash bananas

  3. Add banana mixture to egg mixture and mix well

  4. Add milk and stir

  5. In another bowl, combine oat flour, baking soda, baking powder, salt, and cinnamon

  6. Add wet mixture to flour mixture and mix well

  7. Scoop batter into lined cupcake tray

  8. Bake for 16 minutes at 350 degrees and enjoy!!
