EASY KERALA-STYLE EGG CURRY | The Food Blog

Egg curry is a delicious curry made with eggs in a spicy onion and tomato gravy that is cooked in coconut oil, along with sliced onions, chunks of garlic, and green chilies.


Ingredients:

- 2 onions

- 1-inch ginger

- 2 cloves of garlic

- 1 tomato

- 8 eggs

- 2 green chilies

- Coconut oil, as needed

- Mustard seeds, as desired

- ¼ tablespoon red chili powder

- ⅓ tablespoon cumin

- ½ tablespoon coriander powder

- ½ tablespoon turmeric

- 1 tablespoon salt

- 1 cup of coconut milk
